Retort Operators - The retort machines cook the canned salmon by way of hot steam at a regulated temperature. The process sterilizes the canned salmon by bringing the retort to a specific temperature with steam. .Metal baskets of stacked canned salmon are wheeled on tracks into the long, round tubes of the retort. The boiler, retort and baths, also fittings about the cannery are seen after by a person that is an under-manager. A very competent person is required to fill this post, for if something goes wrong with the boiler or retort, the whole season might be wasted.

Verifies nomenclature and specifications of purchase requests. Searches inventory records or warehouse to determine if material on hand is in sufficient quantity. Consults catalogs and interviews suppliers to obtain prices and specifications. Writes or types purchase order and sends copy to supplier and department originating request. Compiles records of items purchased or transferred between departments, prices, deliveries, and inventories. Computes total cost of items purchased, using calculator. Confers with suppliers concerning late deliveries. This person works on-site at the dock area and uses radio and telephone and fork lift to deliver supplies to the fishing fleet and to tender boats.

Operates magnetic stacking machine, which picks up each layer of cans of canned salmon and moves them onto a wooden pallet that has cardboard sheets between each layer. When the pallet is stacked full, a fork lift places the pallet to a machine which covers the stack with plastic and seals in place. Involves repetitive twisting and reaching.

Cannery Foreman - Alternate title: seafood plant Production Manager - PRODUCTION ENGINEER Plans and coordinates production procedures in industrial plant: Directs production departments such as salmon roe processing. Regulates and coordinates functions of production departments. Introduces efficient production line methods. Initiates and directs procedures to increase company output.

Production Lead - Supervises seafood processors who are packing the roe to maintain uniform quality. Set hours of work and may track time cards. Performs any combination of following tasks concerned with cannery processing of fish roe: Presses headless fish against work surface to ascertain sex of fish by presence or absence of milt. Inserts hand into body cavity of female fish, feels along ventral area of body to locate vent, and cups hand to remove viscera and egg skeins (membrane-enclosed ovaries, tissue, and fish roe). Separates viscera and organs from egg skeins by hand. Discards viscera and organs and places egg skeins in baskets for weighing. Weighs baskets containing egg skeins, using scales, and records totals on tally sheets. Dumps basket of egg skeins on work surface, and examines egg skeins for imperfections, such as blood saturation, immature eggs, and torn membranes. Separates egg skeins, according to size and species of fish. Places acceptable egg skeins in containers for reweighing.
